Chile Chipotle

Did you know that the biggest state in Mexico is also the biggest producer of chipotle chiles?

Chihuahua’s Ciudad Camargo is the number one in the world in terms of both cultivation and quality of product.

 

How are they made?

Completely ripened jalapeno chiles are picked when they are red, left to slightly dry in the sun and are finally slowly smoked over walnut firewood.

Where does the name come from?

From Náhuatl, “chilpoctli” meaning smoked chile.

Where else are they cultivated and prepared?

In the Mexican states of Veracruz in Oaxaca.

How is it presented in the marketplace?

Dried, powdered, in sauce (en adobo), pickled in vinegar or as a salsa.
